If you have not yet tried a peanut sauce, I encourage you to try the recipe from the Vegan for Everybody cookbook! This beautiful peanut sauce was creamy and slightly spicy!
This sauce called for jalapeno peppers, garlic, ginger, curry powder, water, peanut butter, rice vinegar, soy sauce, and sugar. After gathering all of the ingredients and sauteeing the jalapenos, garlic, ginger, and curry for 30 seconds, you add the rest of the ingredients.
It needs to simmer for a couple of minutes to start to thicken. The consistency can easily be adjusted by letting it simmer or adding more water depending on if you need it thicker or thinner. I really love the combination of flavors in this sauce. It had the right amount of spiciness, sweetness, and heat. The curry and ginger added flavor to give this sauce an extra level up.
This curried sauce was the perfect dressing for my spicy peanut rice noodle bowl. It was very easy to put together and had a lot of flavors. I would be interested to see what else I could use this for!
